CHOCOLATE CHEESECAKE WITH BLUEBERRIES


Alhamdulillah.. Jadi jugak Chocolate Cheesecake with Blueberries ku pada percubaan pertama ini. Puas jugak cari cari dan google google resepi, tapi tak tau mana satu yang sedap. Kebetulan semalam teman mukabuku ku Kamilia Ibrahim suggest this recipe. Mmg sedap, katanya dari buku FANTASTIC CHEESECAKE BY ALEX GOH. Mekaseh banyak banyak yer.. Memang sedap betol recipe ni, tak manis sangat dan tak masam sangat.. Saya dan keluarga suka sangat sangat. So perfect rasa dia. Jom kita tengok resepi dia.. :)



INGREDIENTS
Cake Base :
200gm Digestive Biscuits - finely crushed
100gm melted Butter
40gm nibbed Almonds 


Filling :
(A) 500gm Cream Cheese & 180 gm Sugar
(B) 150gm White Chocolate, melted
(C) 5 eggs - big size
(D) 200gm Sour Cream (i used Blueberry Yoghurt), 1 tbsp Lemon Juice & 1 Lemon Zest, grated
(E) 100gm Whipping Cream
(F) 3 tablespoons of Corn Flour
(G) 100gm Fresh Blueberries


METHOD
Cake Base :
1) Add nibbed almonds into digestive biscuits base and mix well. press onto bottom of 23cm springfoam tin.
2) Bake at 160C for 10min and set aside to cool.


Filling :
1) Cream (A) until light and smooth. Add (B) and cream until well blended.
2) Add (C) one at a time and cream untill well combined.
3) Add (D) and cream until smooth. Add (E) & (F), cream until well incorporated.
4) Sprinkle (G) over the biscuit base and pour the cheese filling over the blueberries.
5) Bake in water bath at 160C for 60-70min or until just set.
Turn the oven off and remove the water bath. leave the cake in the oven with door slightly open for 30min. Remove cake from the oven and set aside to cool. Refrigerate the cake for 5 hours.
Release the cake from tin. Decorate with white chocolate curls.


Variation :
Blueberries can be replaced with peaches, strawberries, apricots or raspberries.
